Operational lead on a concept refresh for a boutique hotel in central Sydney. Working directly for the ownership group and in collaboration with the operators,
we refreshed a new build affected by COVID and re-imagined brand direction to positively affect in-house capture rate and external.

Supplier relationship management, recruitment, training and education, pricing build, full beverage build encompassing on brand cocktails, spirits, beer and wine, menu development and direction, food collaboration and direction, culture realignment.
